Ingredients (2 servings)
3 sweet peppers
5 eggs
2 green onion
1 tbsp olive oil
1 oz (25 g) mozzarella cheese
pinch of salt, pepper, and basil leaves
Instructions
- Wash peppers and cut into small pieces.
- Cut green onion into small pieces.
- Place olive oil in a saucepan on medium-high heat and add peppers and onions.
- Sauté for about 20 minutes.
- Beat eggs and add to the saucepan (for another 3 minutes).
- Add a pinch of salt, pepper, and basil leaves, and mozzarella cheese. Remove from heat.
Notes
- I usually serve with a fresh salad made of romaine lettuce, tomatoes, olive oil, and basil leaves.
