Stuffed Peppers (in slow cooker)

Ingredients (3 servings)

6 peppers
½ cup of rice (8 tbsp)
0.55 pounds of ground meat (beef, pork) (250g)
1 onion
1 tsp salt
½ tsp pepper
¼ tsp basil
¼ tsp thyme
1 tsp smoked paprika
2 cups of water (500ml)
½ tomato sauce (124g)
4 tbsp Canola Oil

Instructions

  1. Wash peppers, cut the top off, remove seeds.
  2. Place oil in a baking pan, dice the onion into small pieces, add in a pan, and saute for about 10 minutes.
  3. Add ground meat and simmer until it is halfway done.
  4. Remove the pan from heat, add uncooked rice, salt, and pepper, stir well.
  5. Stuff each pepper with the mix.
  6. Arrange them in a slow cooker, add sliced tomato on top of each pepper.
  7. In a large bowl, mix water, tomato sauce, smoked paprika, basil, and thyme. Pour over peppers.
  8. Cook on high for about 3 hours.

Notes

  • If you do not have a slow cooker you can cook in a baking pan on medium-high heat for about 1 hour. Also, if you use this method, my suggestion is to use an oven-safe dish so when the peppers are done, you can place them in the oven on 400 degrees F (200 degrees C) for about 5-10 minutes.
