Salad with Cashews, Spinach, and Eggs

Ingredients (2 servings)

8 cups baby spinach leaves
2 boiled eggs
½ cup chopped cashew
1 tsp olive oil
1 tsp lemon juice
¼ tsp salt


  1. In a large bowl, mix baby spinach leaves, olive oil, lemon juice, and salt.
  2. Dice hard-boiled eggs and add to spinach.
  3. Add chopped cashews and parmesan.
