Tomato Quinoa​

Ingredients (4 servings)

1 cup cooked quinoa
1 can tomato sauce or diced tomato
1 cup of water
1 tbsp olive oil
1 onion, chopped
1 can black beans
1 can corn
1 tsp salt
1/2 tsp red pepper flakes
1/4 tsp pepper
1/2 tsp paprika


  1. Heat olive oil in a large skillet over medium-high heat and add chopped onion. Saute for 1 minute.
  2. Add quinoa, tomato sauce, water, black beans, corn, and all spices. Stir.
  3. Cook for about 10 minutes.


  • Quinoa can be cooked directly in the skillet. In that case, Cook 15-20 minutes.
  • Suggestion for serving: Add parsley or sliced avocado.
