Ingredients (2 servings)
1 heart romaine lettuce, washed and chopped
olive oil in the spray
2 peppers seeded and chopped
1/2 cup grape or cherry tomatoes
2 tbsp mix of pumpkin seeds and sunflower seeds
1 tbsp dried cranberries
1/2 cup parmesan cheese
1/2 croutons
pinch of salt, pepper, and basil leaves
Instructions
- Place romaine lettuce on 2 separate plates and spray with olive oil.
- Add all the other ingredients on top.
Notes
- Instead of parmesan, you can use mozzarella cheese.
